Here are the ingredients needed to make an onion soup with doses for 4 people.
- 600 grams of golden onions
- 1 stick of celery
- 1.5 liters of vegetable broth
- 400 grams of potatoes
- corn starch (or cornstarch, just enough)
- grated Parmesan cheese
- 200 ml of fresh cream
- 1 egg yolk
- dry white wine
- extra virgin olive oil
- croutons of bread
- a bunch of chives
- salt, just enough
How to make the onion soup, procedure
Prepare the recipe for onion soup it's very simple. Here's how to proceed:
- Clean the onions and celery. Slice these vegetables and add them to a pan with 3 tablespoons of extra virgin olive oil. Sauté for a few minutes, to prevent them from turning brown or even drying out, add a little broth.
- Peel the potatoes, cut them into small pieces and cook them in the same pot. Pour over the boiling broth. Cook over medium heat for 15 minutes, until the potatoes have softened.
- Blend the mixture with a mixer (classic blender or immersion mixer).

- Meanwhile, in a bowl, beat the yolk with the cream. Add it to your onion soup making it emulsify, over low heat, for a few seconds before turning off.
- Sprinkle the cream to taste (we recommend grated Parmesan) and serve with a garnish of chives.
Cream of onions, light recipe
Who prefers onelight recipe, can skip the first two steps and omit the oil. In this case, the vegetables (celery, onions and potatoes) are cooked directly in the broth water. The final result will be less tasty but also less caloric.
